🌸 Almond Tofu (Almond Jelly) Recipe
Servings: ~4 cups | Prep time: 15 min | Chill time: 3–4 hours

Ingredients:

2 cups (480 ml) almond milk (unsweetened, preferably no strong additives)

1 cup (240 ml) water

4 tbsp sugar (adjust to taste)

2 tsp agar-agar powder (or ~6 g gelatin for a softer texture)

1–2 drops almond extract (optional, for stronger aroma)

Fresh fruit (mango, lychee, strawberries) or canned fruit cocktail for topping

Optional syrup: ½ cup water + 1 tbsp sugar + 1 tsp lemon juice

Instructions:

Mix agar-agar: In a saucepan, combine water and agar-agar powder. Stir well before heating so the powder dissolves evenly.

Heat until dissolved: Bring to a gentle boil, stirring constantly, until agar-agar fully dissolves (about 2–3 minutes).

Add almond milk & sugar: Lower heat, pour in almond milk and sugar. Stir until sugar is dissolved. Do not let it boil hard, or the almond flavor can dull.

Flavor: Remove from heat, stir in almond extract if using.

Pour & chill: Pour mixture into a heatproof dish or individual molds. Let cool slightly, then refrigerate 3–4 hours until set.

Serve: Cut into cubes or scoop out, then top with fruit and optional syrup.

Tip: If you want it silkier, use gelatin instead of agar and let it set overnight. Agar sets firmer and is vegan.
